The Eat Shop plans expansion to Coralville with Iowa River Landing bakery

CORALVILLE — The Eat Shop is taking yet another bite out of the bakery market.
The popular bakery, first started by Cheryl Maloney in Solon four years ago, is planning to open a fifth location before its fifth anniversary next year.
Its upcoming Iowa River Landing location, 104 E. Seventh St., Unit 1, will put Coralville on its sprawling Corridor map as it opens in May 2026.
The new location will feature all the things The Eat Shop has become known for throughout its growth across Linn and Johnson counties, including signature cinnamon rolls, pastries, cookies and sandwiches on housemade bread. The Coralville location will be open seven days per week.
Coralville is its latest move after The Eat Shop opened its new flagship bakery in uptown Marion in February. With indoor and patio seating, the location helped popularize the bakery’s growing palate with quick bites for breakfast and lunch like hot sandwiches, soups, salads and flatbreads.
Eat Shop owner Cheryl Maloney said the Coralville location will have seating for about 80 — twice as much as the Marion location.
In August 2023, The Eat Shop started opening two University of Iowa campus locations at the College of Law and College of Public Health.
Before opening in Marion, the bakery started a partnership with Coffee Emporium’s locations across North Liberty, Tiffin, Coralville and Iowa City.
