Pink Umbrella Bakery opens store front in Coralville

CORALVILLE — The Pink Umbrella Bakery opened its first store front in Coralville on Dec. 9 at 2100 Norcor Ave., Suite B.
In addition to its usual baked goods, which have been available at several Hy-Vees and University of Iowa locations, the new store will offer ice cream, daily wraps and salads, hummus with pita chips and a coffee bar.
Heather Sitzmore started the business by serving her grandmother’s family recipes under a pink umbrella at farmers markets. In 2015, she used a Kickstarter campaign to raise $8,000 so she could refurbish a 1955 Trotwood trailer to expand into the local food truck market, according to the Iowa City Press-Citizen.
