Spring has sprung in all its warmth and colorful glory. There will be many festivities to attend and holiday celebrations to be a part of and enjoy. What better way to add to all the celebrations than to dig into a yummy dessert like Banana Split Cake.
This cake has so much flavor. I first started making this cake for potlucks, family gatherings and other celebrations about 15 years ago. I’m the person who doesn't want to bring the same dish as 10 other people, so I make sure to find different dishes to enjoy. I'm not exactly sure how I came up with my version of this cake, but it's always a hit — even with the skeptics.
Honestly, I’ve never made this cake batter from scratch. I’ve always used a box cake base, but you can certainly use your favorite scratch cake recipe. This time I decided to try the Dolly Parton Banana Cake Mix that I found at my local Hy-Vee. I normally use Betty Crocker French Vanilla and add banana flavoring, but I was curious to explore what an already-flavored cake would do for my recipe.
I’m sure this recipe will wow the crowd with minimum effort. It's very versatile. You can add nuts, or you can use a chocolate ganache, but I don’t recommend using chocolate syrup as a topper because it runs and compromises the appearance of the cake.
You also can use a tub of cream cheese filling and a tub of whipped topping combined to make the frosting layer as a super quick and easy alternative to the cream cheese and heavy whipping cream that I used for this cake.
Well, now that I’ve whet our appetites, let’s roll up our sleeves, wash our hands and get started creating our very own version of Banana Split Cake. Enjoy.

Recipe
Banana Split Cake
Ingredients
1 box Dolly Parton Banana cake mix
1 stick salted butter, melted
1 box banana cream dry pudding mix divided in half
1 to 2 cans strawberry pie filling
1/2 cup mini chocolate chips
1 cup heavy whipping cream
2 packages cream cheese, softened
1/2 cup sugar
1 tablespoon vanilla
Optional: Chopped nuts
Directions
Prepare and bake cake as box instructs, adding half of the dry banana pudding mix, and let cool completely.
In a medium mixing bowl combine cream cheese, heavy whipping cream, the other half of the box of pudding mix, sugar and vanilla; whip with mixer until smooth and creamy like frosting.
Spread frosting over the cake after it is completely cool.
Cover the top with strawberry pie filling, chocolate chips and more whipped cream and add your favorite chopped nuts for the full Banana Split effect.
