Peggy Marie Knight, 49, of Iowa City, passed away Sunday, Oct. 4, 2015, surrounded by several adoring family members at University of Iowa Hospitals and Clinics, due to complications associated with injuries she suffered from being struck by a car.
Funeral Mass will be celebrated at 9:30 a.m. Saturday, Oct. 24, at Newman Center, 104 E. Jefferson St., Iowa City, with Father Ed Fitzpatrick officiating. A reception of family and friends will follow in the parish hall.
In lieu of flowers, memorial contributions may be directed to American Cancer Society, American Heart Association or the Helen K. Rossi Volunteer Guest House at University of Iowa Hospitals and Clinics.
Peggy was born May 23, 1966, in Waukon, Iowa, the 11th child of John and Marjorie (Slattery) Baxter. Peggy grew up in Waukon and moved to Iowa City in 1984 to attend the University of Iowa as a student. She had remained in the Iowa City area since that time working for the university and raising her beloved sons, Garret DeNeve and Devin DeNeve of Iowa City. Peggy married Anthony "Tony" Knight on Sept. 14, 2001, and they were blessed with 14 joyous years of marriage.
Peggy began working at the University of Iowa Hospitals & Clinics as a clerk in admitting and registration in 1999 and started working for the department of radiology in 2006. Peggy was currently working in radiology administration as a coding coordinator at the time of her accident. Tony also works in radiology so Peggy and he were blessed to be able to come and go from work together each day – intimate time used for quiet talks and planning activities.
Peggy was very family-oriented and loved nothing more than spending time with her family. She tried very hard to never miss a Baxter or Knight family function no matter how far she had to travel. Peggy also was very into personal fitness and always looked forward to working out with friends on a near daily basis. She enjoyed CrossFit, running and biking and was proud to have completed two Tough Mudder runs.
Peggy was preceded in death by her parents and her sister, Nancy.
She is survived by her husband; her sons; 10 brothers and sisters, Tom (Beth) Baxter of Waukon, Susie (Sam) Bechen of Dubuque, Tony (Mary) Baxter of Waukon, Ann (Mitch) Kunkel of Solon, Mike (Kris) Baxter of Colorado Springs Colo., Katie (Jerry) Weipert of Waukon, Jim (Charlene) Baxter of Waukon, Jerry Baxter of Waukon, Linda (Terry) Fehr of Newton and Barb (Ray) Vitense of Tipton; her parents-in-law, William and Wanda Knight of Dubuque; two sisters-in-law, Rhonda Knight of Dubuque and Angela (David) Shaffer of Mundelein, Ill.; and many nieces and nephews.
