Sykora Bakery remains closed for more cleanup

CEDAR RAPIDS – Sykora Bakery in Czech Village will remain closed until at least Monday following an inspection Thursday by the Linn County Health Department.
The bakery was voluntarily closed by owner John Rocarek after a July 28 inspection found violations in terms of pest control and cleaning of food contact areas. Subsequent inspections have not found sufficient progress to recommend that the business can reopen.
Deb Morlan of the Linn County Health Department said less live insects were observed when she inspected Sykora Bakery between 9:30 and 10:45 a.m. Thursday, but live cockroaches were seen in a sandwich cooler and in an ice cream topping mechanism in the serving area of the shop.
Morlan said numerous dead insects were observed throughout the kitchen and serving area. She said the bakery must remain closed until all the dead insects have been removed and no live insects are observed.
Morlan said all food contact surfaces need to be sanitized before the business can reopen.
Sykora Bakery, a Czech Village landmark, reopened in April 2009 after extensive remodeling was halted by the June 2008 flood.
