Vegan food front and center during Corridor Veg Week

Corridor Veg Week, a showcase of vegan dining options in the Corridor, returns Friday through April 28.
Organized by local woman Thais Carnall, this is the fourth annual Corridor Veg Week. Each participating restaurant presents plant-based dishes, free of meat, dairy and eggs.
Participating restaurants include Cappy's Pizzeria, Caucho, Full Bowl, Gnarly Pepper, Lion Bridge Brewing Company, Quarter Barrel and Rawlicious in Cedar Rapids, Karma Coffee Cafe in Hiawatha, Marquee Pizzeria in Coralville, Red's Alehouse in North Liberty and Dumpling Darling and Oasis Falafel in Iowa City.
Examples of menus include things like a vegan free range burger at Karma Coffee Cafe, a jackfruit gyro at Lion Bridge and a spinach artichoke pizza with vegan mozzarella and creamy cashew sauce at Cappy's Pizzeria.
Portions of food sales during the week will be donated to Iowa Farm Sanctuary.
