Sykora Bakery better, but more cleaning still needed

A Linn County Department of Health inspection Monday at Sykora Bakery in Czech Village found improvement since the last inspection on Thursday, but more work will be needed before it reopens for business.
In her report, Deb Marlin of the health department said more kitchen equipment needed to be cleaned and dead insects removed from a pizza cooler as well as the door grooves on a sandwich cooler.
Marlin said another round of pest control is needed along with removing dead insects from the coolers as well as the floor in the serving area, kitchen and basement. She said live cockroaches were seen in the door of the pizza cooler and weevils were observed in a rye flour container.
Marlin said another inspection is planned for Thursday.
John Rocarek, owner of Sykora Bakery, voluntarily closed the landmark business after the health department conducted followup visits in late July after citing 17 violations found during a routine annual inspection on March 23.
Sykora Bakery reopened in April 2009 after extensive remodeling was halted by the June 2008 flood.
