What are grocery stores doing to divert food from landfills? And what happens to the food that doesn’t get sold?

Food pantries and food-based nonprofits are being overwhelmed with increasing need, and many have been unable to keep up. Community food providers are worried that without better collaborative efforts between pantries, and increased support from local government, food is going to become increasingly difficult to access in Linn County.

A “potato packing party” hosted by Table to Table repackaged 18,000 pounds of the vegetables Friday afternoon — a fraction of the record-setting 58,000-pound donation the Iowa City nonprofit received this week.

The organization is looking for volunteers to bolster their local food rescue operations and tackle summer produce initiatives. Volunteers transport over 40,000 lbs. of food weekly to agencies throughout Johnson County that serve food-insecure populations.

Starting from a space of 700 square feet, Table to Table celebrates 25 years of pioneering food rescue in Eastern Iowa.

Table to Table, a Johnson County nonprofit that rescues 2.5 million pounds of food each year and delivers it at no charge to local pantries and social service agencies, is kicking off a celebration of 25 years and fundraising for construction expenses with a free-to-the-publicpen house on Thursday.
