What to do if the urban chickens don’t live?

Live chickens in the backyards will be cute to observe. However, dead ones will be eaten and I've not read anything on how these live chickens will be “processed” to be eaten.
Head, feet, feathers and entrails will need to be properly disposed of. The method of “dispatching” live ones in backyards also would be subject to some city ordinances, right?
Farmers are able to raise and kill chickens. Are we set up to do this within the city in a legal, safe and healthy manner?
