If you're looking for something light and delicious this weekend, try this couscous recipe made by Information Content Manager Mary Sharp. Mary says this recipe makes enough for big dinner and can be made in advance. The great thing about couscous is if you stick the leftovers in the fridge, they're good for several days.
The lemon and the raisins in this recipe gives it a light tangy taste that works with this lovely weather we've been having.
COUSCOUS SALAD
Mix together:
DRESSING:
Mix all of these together the couscous, corn, black beans, pepper, onions, raisins, garlic, salt, pepper and lemon rind in a big bowl. In a separate bowl, mix together the olive oil and lemon juice to make the dressing . Pour the dressing over the couscous, mixing well. Serve immediately or place in the refrigerator for use later.
