At a time when unique, handcrafted, local foods and drinks continue to grow in popularity, an Iowa law is getting in the way of small businesses' ability to meet demand.
An archaic state regulation that bans bartenders from preparing alcoholic drinks in advance is preventing local business owners from riding a wave of popularity of infused spirits and bitters. When legislators convene next month, they should revise the state law that prohibits restaurants and bars from selling liquor that has been stored in anything but the original packaging.
That law, which predates Prohibition, also bars the businesses from making infusions - adding fruits, vegetables or herbs to a spirit for later consumption.
Bartenders can mix spirits, of course, but only for immediate consumption.
Businesses that defy the law can face fines, suspension or revocation of their liquor license.
But businesses with licensed kitchens infuse all kinds liquids for use in recipes. We see no harm in allowing them to include alcohol in the mix.
So long as the business is a licensed and inspected operation, legislators should allow businesses to create bitters and infused spirits - to add a little local flavor to their drink menu.
