My search began with an alternative to the typical buffalo wing. I loved the flavor, but I found the chewy, rubbery texture of the unbattered fried chicken skin unpalatable. In 2007, I was intrigued by a documentary showcasing — you guessed it — Buffalo wings.
The history of Buffalo wings gave me the idea for my famous naked wing recipe.
Using my friends and family as willing test subjects, I perfected my awesome naked wing recipe in 2008. In 2015 I launched my catering business, and demand for my Lemon Pepper Naked Wings was high. It was a great feeling.
Everyone wonders how I get my naked wings so crunchy and flavorful, but I have never shared my secret recipe — until now.
Demand is so high for my naked wings that I thought it was time to let everyone in on my secret. Who knows, maybe someone will be inspired to take them even further, like I did with the Buffalo wing recipe.

These wings can be prepped weeks in advance. Just follow the preparation portion of my recipe and freeze in freezer bags. The key is to have a light-crispy and crunchy outside and yummy, juicy meat on the inside without the heaviness of the batter competing with the already succulent “yard bird.”

I’ve made a variety of naked wings over the years. The most popular are lemon pepper, garlic Parmesan and the ever popular hot wings. Of course, I’m still coming up with more sauce combinations to complement these already delicious wings, and I encourage you all to do the same.
Now it’s time to reveal my secret recipe.
LEMON PEPPER NAKED WINGs
1 bag wingettes
1 cup hot sauce
1/4 cup flour
Dry seasoning to taste: Italian seasoning, paprika, lemon pepper, garlic powder and cooking oil
Wash, dry and season wingettes. Add in hot sauce and mix well, then add flour; mix well. Set in refrigerator while you heat the oil in your fryer (about 10 mins.)
Fry wingettes until golden brown and juices run clear. Then drain wingettes on paper towels and dust them with lemon pepper immediately. Enjoy.
